Pecan Chocolate Truffles

If you ever need an excuse to try something sweet, we’re giving you the perfect excuse right now. These Pecan Chocolate Truffles are absolutely delicious and are sure to please any sweet tooth. Enjoy it as a dessert or to simply soothe a sweet craving….we really do insist!

Pecan Chocolate Truffles

Ingredients

  • Pecan Praline:
  • 60g Toasted Pecans, finely chopped
  • 90g White Sugar
  • 60ml Water
  • Truffles:
  • 60g Butter, diced
  • 250g Dark Chocolate, chopped
  • 125ml Double Thick Cream
  • 5ml Vanilla Extract
  • 125ml Cocoa Powder

Instructions

  1. Prepare praline first
  2. Lightly grease a clean baking tray and set aside.
  3. Place sugar and water in small saucepan on a low heat and stir lightly till sugar is disolved.
  4. Increase heat and boil until syrup changed to a golden colour. 
  5. Cook for another 2 minutes and stir in chopped pecans.
  6. Pour mixture into prepared tray and set aside to cool.
  7. When brittle is set and hard, break into pieces and place in a food processor and blend.

 

  1. Melt butter in a small saucepan and remove from heat. 
  2. Add chocolate to pot and allow to stand, covered, for 3 minutes.
  3. Stir melted chocolate till smooth.
  4. Slowly add cream and vanilla extract and stir well.
  5. Allow mixture to cool down and stir in praline .
  6. Roll heaped teaspoon sized truffles in cocoa and form small rounds.
  7. Place truffles of a lightly cocoa dusted tray or board and refrigerate till firm
