Monster Breakie Sandwich for your Fella

Ingredients

  • 3 Slices Sour Dough or Oval Bread
  • 4-5 slices of Back Bacon
  • 1 Egg
  • Hand full of Watercress or Rocket
  • Bunch of Vine-ripened Tomatoes
  • 1 tbl Whole Grain Mustard
  • 1 tbl Mayonnaise
  • 4 slices of Smoked Chicken
  • 4 Slices of Brie Cheese

Instructions

  1. Grill bacon to desired crispiness.
  2. Grill Vine Tomatoes for a few minutes in the leftover bacon fat
  3. Fry Egg to the way he likes it.
  4. Toast bread slices.
  5. Mix Mustard and Mayonnaise together.
  6. Assemble sandwich by starting with one slice of toast topped with the watercress or rocket, the place the grilled bacon and the fried egg.
  7. Place the next slice of toast on top of the egg and spread mustard and mayo on top of toast, follow with smoked chicken slices and then brie.
  8. If you want to melt the brie, place under the grill with the oven door open for a minute or two.
  9. Close the sandwich with the last slice of toast and place on a plate or decorated wooden board.
  10. Garnish with the juicy bacon-infused tomatoes and a crack of black pepper.
