Fresh and full of flavour, this soup is great served hot or cold.

Creamy Pea & Mint Soup

Ingredients

  • 500g Frozen Peas
  • 3 Leeks, sliced
  • 1 Tblsp Butter
  • 1 tsp Olive Oil
  • 500g Frozen Peas
  • 500ml Chicken Stock
  • 4 Mint Leaves
  • Salt & Pepper to taste
  • 60ml Cream

Instructions

  1. Heat a large sauce pan on medium heat and add oil, butter and sliced leeks.
  2. Saute the leeks till soft and translucent.
  3. Add the peas, stock, mint leaves and salt and pepper and reduce heat.
  4. Cook for about 20 minutes, or till peas are very soft.
  5. Remove from heat and blend the pea soup with cream.
