Introduction (when it’s suitable, why it’s good to eat, etc)
Fresh and full of flavour, this soup is great served hot or cold.
Ingredients
- 500g Frozen Peas
- 3 Leeks, sliced
- 1 Tblsp Butter
- 1 tsp Olive Oil
- 500g Frozen Peas
- 500ml Chicken Stock
- 4 Mint Leaves
- Salt & Pepper to taste
- 60ml Cream
Instructions
- Heat a large sauce pan on medium heat and add oil, butter and sliced leeks.
- Saute the leeks till soft and translucent.
- Add the peas, stock, mint leaves and salt and pepper and reduce heat.
- Cook for about 20 minutes, or till peas are very soft.
- Remove from heat and blend the pea soup with cream.
